VINEYARD

  • Average age of the vines: 50 years
  • Average density of the vines: 5500 vines per hectare
  • Nature of the soil: hillside clay-limestone soil (Monbazillac plateau)

WINEMAKING

  • Manual harvest by successive selections (between 3 and 5 passages depending on the year)
  • Average yield of 15 hl/ha
  • Pneumatic pressing for 3 to 4 hours followed by 24 hours of cold settling (about 4°C)
  • Alcoholic fermentation 100% in French oak barrels (around 18°C) followed by cold “mutage”
  • Aging for 22 months 100% in French oak barrels
  • Bottled in September 2015
  • Total Sulfur Dioxide (sulfites): 198 mg/l (Organic limit: 360 mg/l)
  • Balance: 12.80% ABV & residual sugars = 127 g/l ; total acidity: 3.7 g/l ; pH : 3.64
  • Cellaring: enjoy now until 2040
