Golden yellow color, brilliant and limpid.

The nose, very fine at first, reveals itself as the tasting progresses through intense notes of white fruits and vanilla.

The mouth, elegant and warm, presents a nice balance between richness and freshness and seduces with its persistent fruity aromas.

WINEMAKING

Manual harvest by successive passes (between 3 and 5 passes depending on the vintage)
Average yield of 18 hl/ha
Pneumatic pressing for 3 to 4 hours followed by 24 hours of cold settling (about 4°C)
Alcoholic fermentation 100% in French oak barrels (around 18°C) followed by cold “mutage”
Aged for 22 months 100% in French oak barrels
Bottling in September 2019
Total Sulfur Dioxide (sulfites): 198 mg/l (Organic limit: 360 mg/l)
Balance: 12.90% ABV & residual sugars = 136 g/l; total acidity: 2.97 g/l; pH: 3.85
Cellaring: enjoy now until 2040
