Black cherry-red color.

Initial nose is strawberry, slightly "pinotant", black olive to licorice, cachou. Swirling brings out saffron and violet notes.

The palate, frank on the attack, is characterized by its subtle balance between crispness, fruitiness and the final freshness. The tannins are still quite firm.

VINEYARD

Average age of the vines: 15 years
Average density of the vines: 5000 vines per hectare
Nature of the soil: hillside clay-limestone soil (Monbazillac plateau)

WINEMAKING

Harvest at optimum ripeness for each varietal (harvest dates based on grape variety)
Average yield of 40 hl/ha
Separate vinification adapted to each grape variety in thermo-regulated tanks
Cold pre-fermentation maceration (8°C) for 3 days with light punch-down of the cap and then, pump-over 2 to 3 times a day during the alcoholic fermentation
Hot post-fermentation maceration (28-30°C) for 7 days
Aged 100% in a stainless steel tank
Bottling early in April 2024 to keep some carbon dioxyde (CO2) from the alcoholic fermentation in order to protect the wine during aging in bottles
Total Sulfur Dioxide (sulfites) < 10 mg/l (NO SULFITES ADDED)
Cellaring: enjoy now until 2029
